My Favorite Christmas Cookie Recipes. Enjoy!

It’s hard to believe it’s already the week of Christmas and there’s only eight days left of the year! I love baking and not just at the holidays so I decided to share my cut-out sugar cookie recipe which I’ve been sworn to secrecy what I got it from a friend, but hey she doesn’t need to know I put it on the internet for all of the world to see. One of my favorite things about making sugar cookies, is it’s a great activity I get to do with my friend’s kids. Every time I visit, it’s now an expectation that I bring sugar cookies to frost and decorate.

Sugar Cookies

1 cup butter

1 cup sugar

1 egg

3 Tbsp milk

1 tsp vanilla

3 cups flour

1 ½ tsp baking powder

½ tsp salt

Cream together butter and sugar. Add egg, milk, and vanilla. In separate bowl, mix together dry ingredients. Add flour mixture into wet mixture in 2-3 increments to make sure it gets blend well, but don’t over mix. Bake at 400 degrees for 6-7 minutes.

Sugar Cooking Frosting

½ cup butter – super soft

2 cups powdered sugar

1 egg yolk

1 tsp vanilla

1 Tbsp milk

Cream together butter and powdered sugar. Add in egg yolk, vanilla, and milk.

Another favorite holiday cookie of mine, is one my Aunt Karen made each year. She was the Christmas Cookie Queen and her cookie platters were epic with at least 10 different kinds of cookies. I was fortunate enough to get to get together with my three aunts and Mom a few years ago and bake a bunch of different Christmas cookies.

Rolo Cookies

1 cup sugar

1 cup brown sugar

1 cup butter

2 tsp vanilla

2 eggs

2 ½ cup flour

¾ cup cocoa

1 tsp soda

1 cup chopped pecans

48 Rolo candies

4 oz white chocolate

Preheat oven to 375 degrees. Mix together butter, sugar, brown sugar. Add vanilla and eggs. In separate bowl, combine flour, cocoa, and baking soda and add to mixture. Stir in ½ cup pecans. Use about 1 Tbsp of dough for each Rolo candy covering it completely. In a small bowl, combine remaining ½ cup pecans and 1 Tbsp sugar. Press one side of each ball into pecan sugar mixture. Place 2” apart on cookie sheet. Bake 7-10 minutes or until set and slightly cracked. Melt white chocolate over medium heat and drizzle over cookies.
